The pike conger, or “hamo” in Japan, is a traditional food in Japanese cuisine. A tasty way to prepare conger eel is kabayaki, where sweet teriyaki soy sauce is brushed on while the deboned fish is grilled whole. Kabayaki eel is best served over rice or with “tamagoyaki”, a Japanese-style egg roll omelette.
